Description:
Removing and placing the pretzels on the baking tray is done using a carrier integrated into the drawer. When the carrier is lifted from the drawer, the lye-treated pretzels are lifted from the lye grid and can be easily placed on a baking tray.
The operator has no contact with the lye solution at any time! The lye system is supplied from a replaceable container. A suction pipe and a return hose are inserted into the container. The lye solution is used up after approximately 3000 pretzels. The lye solution is replaced by simply swapping the suction pipe and return hose to a new container. The replaceable containers are tightly screwed together and can therefore be safely transported back to the bakery, washed, and refilled.
Therefore, changing the lye solution in the branch is no longer necessary. Dough sludge residue collects at the bottom of the exchange container. The lye dipping machine rinses itself after each use. This machine can be used to dip all types of lye-dipped baked goods, such as pretzels, lye rolls, and lye croissants. Its compact size and fully enclosed design ensure safe and clean operation.
